Now that we are back in the swing of things regarding school, we have returned to our culinary experiments via our lunch menus. This year we are going global and using
Vegan Lunch Box Around the World. Of course, that doesn't guarantee grand experimentation as last week Phoebe chose the New York menu from the United States section, which featured Mini Bagels and Vegan Cream Cheese. We got Hashbrown Patties from Trader Joe's to stand in for the Latkes (insufficient motivation on my part to make them), and I made Chocolate Chip Muffins to sub for the Chocolate Babka Muffins (lacked ingredients). Finished it off with some carrot sticks, an apple, and drinks, and we were all set! 0738213578

This week, we have gone Tex-Mex with Refried Beans wrapped in a Whole Wheat Tortilla. We are finishing the rest of the Chocolate Chip Muffins for snack, and having snap peas and red pepper strips, an apple, and drinks.
Because this is World Vegetarian Day, I made some mini Apple Muffins from
Enjoy Life's Cupcakes and Sweet Treats for Everyone cookbook for Phoebe to bring in and share with her class. Not only are they vegan, but they are gluten-free and soy-free as well. And quite yummy! (We ate the leftovers yesterday)

The Mysterious Benedict Society, and Phoebe is reading the second Sisters Grimm book,
The Unusual Suspects.Hermione will make an encore for Halloween this year, only we are making her Second Year Hermione after her run in with the Polyjuice Potion turned her partially into a cat!
